VINIFICATION

The grapes were destemmed on arrival at the winery and put directly into the pneumatic press under regulated atmosphere, saturated with carbon dioxide. The selection of juices was made through tastings.  Fermentation started in tanks under strict temperature control and was then carried out in barrels until completed.

Maturing: The wine was raised in casks for a few months with regular
“bâtonnages” or stirring of the fine lees.
Aging Potential: Laying down : 3 to 5 years

CHARACTERISTICS

It has a pale‐yellow colour, with greenish lights. The nose is intense and original, with toasted notes and aromas of peach and pear. The attack has hints of licorice, with toasted notes. The wine is pleasantly fresh.

FOOD PAIRINGS

Good match with fish, grilled or cooked in a sauce and white meats. To serve at 14‐15° C.
