Grape Variety(ies): 60% Pinot Meunier, 30% Pinot Noir et 10% Chardonnay.
Type of Soil: Clay and limestone.
Yield: 67 hl / ha
Age of vines: 35 years
Harvest : Manual Harvest. 70% harvest 2007 & 30% harvest 2006.
Available in: 37,5 cl,75 cl, et 150 cl.

VINIFICATION

Grapes picked manually in search for an optimum sugar / acid in the berry follow‐up of a traditional pressing
Alcoholic fermentation in stainless stell tanks
Completely realized malo‐lactic fermentation.
Maturing
: On lees for 6 months follow‐up of a filtration before the bottling.

Aging potential: Consume within 3-5 years

CHARACTERISTICS

Scent of citrus fruits: grapefruit and lemon. Fresh and mineral mouth. Light dosage (5,5 g/L) which lets the wine express itself.

NOTES

How better to introduce you to our south facing hillside with our vintage Extra Brut Sélection? A blend modeled on the vine in our village, this wine expresses the uniqueness of our region. The dominant Meunier brings fruitiness with aromas of apple and pear. The grapes are selected on our most clay soils to strengthen the structure of the wine. The low dosage (5.5 g / l) exacerbates the sharpness of the wine and freshness.
