Annual Production: 5,000 bottles
Grape Variety(ies): 60% Pinot Meunier, 30% Pinot Noir, 10% Chardonnay. And coteaux champenois 16% from pinot Meunier of the harvest 2007 for the tint.
Type of Soil: Clay and limestone.
Yield: 70 hl / ha
Age of vines: 35 years
Harvest : Manual Harvest. 70% harvest 2007 & 30% harvest 2006.
% Alc: 12%

VINIFICATION

Grapes picked manually in search for an optimum sugar / acid in the berry follow‐up of a traditional pressing. Alcoholic fermentation in stainless stell tanks. Completely realized malo‐lactic fermentation.

Maturing: On lees for 6 months follow‐up of a filtration before the bottling. 9g/L of sugar.

Aging potential: Consume within 2 years

CHARACTERISTICS

Scent of fresh red berries.
Light mouth reminding a typical cake pastry strawberry plant.

FOOD PAIRINGS

To serve at 9°C.
Good match with aperitif and dessert of fruits if they are not too much sweetened.

NOTES

New version of our wine selection , Brut Rosé has its pale pink by the red wine key, developed with our Pinot Meunier, we add at the time of the assemblies. Very fruity, slightly sweet ( 8-9g / l), this will cheer Champagne cocktails or perfect accompaniment to fruit-based desserts.
