A high quality wine which improves over the years, of intense garnet red colour, with a pleasing aroma of cooked plums and blackberries, with an underlying hint of vanilla. It has a full body, a rich tannic structure, soft with an intense fruity taste and a balanced, elegant, spiced final note. The fact that it comes from Cabernet, Merlot, Barbera and Nebbiolo grapes, cultivated by the Einaudi estates in Barolo and Dogliani, influences the distinct Piedmontese character of this wine.
The annual production is of 4.500 bottles.

THE WINE MAKING
Fermented in steel tanks at a controlled fermentation temperature (30°C-32°C), racked after 10/12 days, followed by decanting in casks. It is gotten malolactic treatment at a constant temperature and thereafter matured in casks of first, second and third passage for eighteen months. The grapes that compose it are vinified separately and are assembled before bottling. Refined in bottle for six months, before being released at the beginning of the third year.
