VINIFICATION

Hand‐harvest grapes – strict selection – treading and breeking 90% ‐ malo‐lactic fermentation in concrete vats.

 

Maturing: 33 months in old casks (trees planed a century ago)
Aging potential: 15+ years 

CHARACTERISTICS

Pronounced purple dress, black fruits aromas, Ample, tannins still present. Structured and strong wine. Very promising.

Good Match with: Red Meat ‐ Game (Woodcock ‐ Thrushes) Cheese. To be served at: 16 or 18° C.
