VINIFICATION
The grapes with a very low yield are handpicked with a strict selection during the harvest.
It’s a traditional vinification with long maceration before we stop the fermentation by adding neutral alcohol.
This winemaking process stops the alcoholic fermentation to keep the matural sugar from the grape.
Maturing: A long ageing for several years in an oxidative milieu in 225L casks
Aging Potential: Laying down : 10 to 12 years
CHARACTERISTICS
Dark amber colour with mahogany tints, the sign of an exceptional product. Nose of a beautiful aromatic complexity, with woody and candied orange notes. The mouth is remarkably ample, markedly well‐balanced with notes of prunes in brandy, mild spices and orange blossom. Lovely aromatic persistence.
FOOD PAIRINGS
Good match with Apéritif, foie gras, blue cheese or desserts. To serve at 12° C.
