VINIFICATION
Fermentation on the skins of stemmed, crushed grapes.
During this semi‐liquid phase (when the grapes have been crushed), the phenolic compounds are painstakingly extracted by means of precise temperature control and by the meticulously controlled, mechanical extraction methods of pumping‐over and/or rack and return.The grapes are fermented at 30°C to extract the compounds contained in the skins. The duration of skin contact varies depending on the parcel and the vintage and is determined by means of daily tasting. The average duration is 15‐18 days, but certain vats may macerate for as long as 28 days.
